Gah! The move has apparently stolen most of my gray matter. My apologies for inadvertently missing natalitles of a couple of folks I adore...
I should have my DSL up and running this evening, but in case Mr. Murphy is giving me undue attention, I will be preemptive in birthday wishes this weekend:

Date: 2005-09-09 04:13 pm (UTC)I usually get 4-6 oz. of salmon per person. You'll also need fresh lemon thyme, sea salt, olive oil and prosciutto. I used 1/2 about package of thyme (hurrah for Central Market!), about a tablespoon of coarse sea salt and 2 tablespoons of oil. Prosciutto tends to be thinly sliced so you may only need 3-4 oz.
Put the sea salt & lemon thyme in a mortar and pestle. (The salt is mainly to help grind the herbs and make them more fragrantly tasty.) Mix with olive oil and drizzle over salmon. Wrap in prosciutto. Bake at 350° for 25-30 minutes (or longer for bigger portions).
As you can see, it's more "abouts" and "to taste" than an exact science. Super easy and *SO* yum!
