Once you get settled, I'd like that salmon recipe that we had over at your house, oh many, many months ago. I keep meaning to ask you and then forgetting.

I know it off the top of my head - love the Jamie Oliver simplicity!

I usually get 4-6 oz. of salmon per person. You'll also need fresh lemon thyme, sea salt, olive oil and prosciutto. I used 1/2 about package of thyme (hurrah for Central Market!), about a tablespoon of coarse sea salt and 2 tablespoons of oil. Prosciutto tends to be thinly sliced so you may only need 3-4 oz.

Put the sea salt & lemon thyme in a mortar and pestle. (The salt is mainly to help grind the herbs and make them more fragrantly tasty.) Mix with olive oil and drizzle over salmon. Wrap in prosciutto. Bake at 350° for 25-30 minutes (or longer for bigger portions).

As you can see, it's more "abouts" and "to taste" than an exact science. Super easy and *SO* yum!

Oh, and thanks too. :) I was reading how simple it was and thought I could do that this weekend. Then I got to the mortar and pestle part.

Mortar and Pestle

A passable substitute for a mortar and pestle is a good, strong bowl and the end of a rolling pin, or the back of a very strong spoon. Your wrist will hurt because you'll need more pressure, but it works. :)

Oooh, good idea! And for this recipe, the herbs just need a bit of crushing. They don't need to be finely ground or anything so maybe that will make it easier. You might even be able to cheat a little and start the process off with some kitchen shears.

Thanks, love.

Miss all of you as well...

Any chance there'll be a visit during this season?

I hope so. Was thinking October, but QAL booked studio time every Sunday. Am thinking the last weekend of this month may work out, though. *crosses fingers*
